There are some recipes that you make and they instantly become classics. One evening I saw a tweet about Italian chili, thought it sounded good, and threw together the following recipe. The rest is history. It’s definitely not low fat or “clean eating” but it’s so delicious that I have to chew gum while making it to keep from eating the whole pot!
two 14oz cans cannellini beans
one 28oz can diced tomatoes with Italian spices
one pound Italian sausage
Execution: Coat a large saucepan with olive oil and cook sausage. Remove and set aside. In the same pan, add the two cans of beans and minced garlic and oregano to taste (I use about a tbsp each). Saute until softened. Add tomatoes and sausage and simmer for as long as you can before you find yourself eating it all out of the pan with a spoon.
