Make This Monday : Slow Cooker Indian Curry

You need this Indian Slow Cooker Curry in your life. My high school friend Tabitha posted the recipe last week and I begged her to let me share it because it made me want to lick my computer screen. Make your Monday easier; throw this in your slow cooker now! And leave a comment with the recipe you make that makes your week easier!

Crock Pot Indian Chicken Curry

-whole onion, chopped
-four carrots, chopped
-large sweet potato, diced
-four garlic cloves, minced
-two lbs chicken thighs, diced
-one package frozen or fresh (pre-washed) spinach
-tomato paste
-chicken broth
-coconut milk (two 14oz cans)
-spices (see below)

-Roll chicken thighs in tomato paste then in spice mixture (2tsp cumin, 2tsp coriander, 1/2tsp turmeric, 1/2tsp cayenne, 1/2 garam masala, 1/2tsp ginger.)
-Place vegetables on bottom of slow cooker and then stir in the minced garlic.
-Add chicken on top of vegetables
-Add one cup chicken broth and three cups coconut milk.
-Cook on low around 5 hours (stir halfway through)
-Add spinach last 10 minutes.

Serve as soup or over rice or mashed cauliflower.
