The kitchen is where I get creative and I love it, especially when I get to get creative with dessert. The perfect ice cream bars for these cakes are found at Walmart. Only at Walmart! They make the right size skinny sandwiches that make building these in loaf pans a snap. Though I encourage you to get creative with your favorite candies, I have to tell you, SNICKERS® are the creme de la creme. The chocolate, caramel, and nougat melt into the sandwiches like they were made to play together. No opposing teams in this cake.
Luckily Walmart also has the best selection of candy. They have got all of the SNICKERS® line. For this cake I use a combination of the bite size (for the layers) and the fun size (for topping.) You will need a big tub of whipped topping for every loaf pan sized cake as well as chocolate syrup (optional, but awesome.)
1. Layer the bottom of the loaf pan with ice cream sandwiches, breaking in half to fit to the end.
2. Cover with whipped topping in a smooth layer, making sure that all the crevices are filled as well.
3. Crumble about thirty bite size SNICKERS® and use half to cover the whipped topping.
4. Drizzle with chocolate syrup.
5. Repeat once.
6. Freeze for at least one hour.
7. Cut into thin slices and serve.
Since we always watch the BIG GAME with our playgroup, I wanted to make a second more fun cake for the kiddos. I usually make this version of the cake with strawberry cake and Starburst® but I was inspired by the Walmart Banana Split ice cream sandwiches to make a Skittles® ice cream cake.
This involves a little more stuffing of the layering (you’re going to want to smash down the Skittles® into the whipped topping (see below for reference.) Otherwise, follow the above directions except substitute the chocolate syrup with strawberry syrup.
The finished product tastes as good as it looks. Promise!
