“Fast Food” Fridays : Egg Muffins

About “Fast Food” Fridays: There used to be a feature on this blog called Frozen Pizza Fridays but we’ve made a family commitment to eating less packaged food. So I have replaced our usual Friday night pizzas with “fast food.” We’re not talking McDonald’s here. We’re talking recipes that are quick, easy, and delicious. And require little prep and clean up so we can get back to Friday family time as soon as possible.

I love to serve these simple “muffins” when we have “picnics” on movie nights. They are super simple to make and are immesely adaptable.

Fast Food Fridays Egg Muffins Recipe

Before beginning:
Preheat the muffin tin
Brown the pork sausage (or whatever meat/meat substitute you are using)
Dice the green onions
Preheat oven to 375

Yay for picture directions!



Pop in the oven for 20-25 minutes until tops start to brown slightly. Let cool, then pop out. They refrigerate for a week or so and freeze beautifully (these will be a great thing to take to new parents: perfect nursing breakfast!)

  3. I love the idea of “Fast Food Fridays” as a way to make quick and healthy meals. I wish my husband and I liked eggs. They are so versitile and make some incredible dishes. We’ve tried eating them a bunch of different ways over the years with no luck ๐Ÿ™ I do like to make something similar to this meal for guests when we host a bruch. I use mini-muffin pans and sautee some spinach and onions and mix with parmesean cheese – people always seem to love them!

  7. I love sausage & eggs, this recipe looks easy to do & I love that you can freeze these. These would be great to carry to work! Do you think egg beaters would work as well as regular eggs?
